Unbeatable Beet Cake
Ingredients
1 cup flavourless oil
1 1/2 cups brown sugar
3 eggs
2 cups beets (wrapped individually in foil roasted at 400 for 40 minutes)
1/2 tsp vanilla
2 cups unbleached all-purpose flour
6 tbsp cocoa powder
1 1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ground cardamom
Directions
Preheat oven to 350F. Grease & flour10-cup round Bundt cake pan. Set aside.
Toss the beets into a food processor, puree. Add the rest of the ingredients, blend until all incorporated and smooth.. Pour into cake pan.
Bake for 50 minutes, or until edges pull away from the pan and inserted toothpick is removed clean.

* Cooks note – Beets are roasted with skin on, peeled and chopped then processed.
